Lactose-free Milk Chocolate

Zurich-based Barry Callebaut has announced the launch of a new lactose-free milk chocolate to be sold in Europe. The new chocolate uses skimmed milk powder with the lowest lactose content available on the market. This allows for higher amounts of milk powder in Callebaut’s recipe; resulting in chocolate with a similar taste to regular milk chocolate, without the high levels of lactose.
